Amy's roasted vegetable pizza, our first non-dairy pizza, has been so popular that we decided to make a Light & Lean version. In order to add nutrition and flavor without adding calories, we took our special Light & Lean crust, which is low in calories and fat, and topped it with lots of organic vegetables...caramelized red and yellow onions, fire roasted red bell peppers, shiitake mushrooms and artichoke hearts.
